How to Make


  1. Preheat the oven to 180°C. Beat the butter and sugar together with an electric whisk or wooden spoon.
  2. Put the rest of the cake ingredients into the bowl and then mix with an electric whisk until smooth.
  3. Spoon into cupcake cases on a cupcake tin and bake for 15 minutes.

For icing:

  1. Mix together the icing sugar and water together. Then add in a small amount of blue food colouring to get a light blue colour.
  2. Next wait for the icing to set. Then make some more icing and use a bit more icing sugar to make this batch thicker.
  3. Spoon some of the white icing onto each side of the cupcake and then cut off some rainbow liquorice and stick each end in the white icing, so it forms a curve and looks like a rainbow.

Top Tip

Place the liquorice rainbows into the extra icing whilst slightly still wet so they stick. You may need to hold them in place for a few minutes.
