Lemon Drizzle Cake

Our light Lemon Drizzle Cake is bursting with zest, creating the perfect fluffy finale to teatime.

How to Make

  1. Preheat the oven to 180C/ 160 Fan/ Gas Mark 4
  2. Beat together the butter and sugar until pale and creamy.
  3. Add the eggs, one at a time, slowly mixing through.
  4. Sift in the flour and then add the finely grated zest of the lemon and mix.
  5. Line a loaf tin with greaseproof paper, then spoon in the mixture and level the top with a spoon.
  6. Bake for 45-50 minutes.
  7. While the cake is cooling, mix together the juice of 2 lemons and the caster sugar to make a drizzle.
  8. Prick the warm cake with a fork, then pour over the drizzle.
  9. Leave in the tin until completely cool, then remove and serve.
